Taco Salad- 100% Plant Based and Delicious!

I love challenges… I don’t know about you, but I can do anything for a week! And I am so excited to be a part of Pure Goodness Life’s salad change. I also love tacos. So when Tuesday rolled around I figured a Taco Tuesday Taco Salad would be perfect! Here is the recipe:

Ingredients:

  • Any lettuce- I used mixed greens, spinach and iceberg
  • Beans… I used canned pinto beans that I sprinkled with Trader Joe’s Chili Lime Seasoning
  • Homemade vegan ranch (Recipe below)
  • Salsa
  • Seasoned Brown Rice (can be plain or whatever you have) *optional
  • Tortilla Chips
  • Avocado (mine were not ripe yet so I didn’t add this)
  • Any other Mexican type ingredient you like!

All you need to do is toss all of the ingredients together! I like to put the chips on the bottom and the salsa on the top.

To make homemade ranch just mix vegan mayo with a little unsweetened plant based milk and add dried dill, onion powder, garlic powder, salt and pepper- so easy!!!

This stuff is awesome!!!!
