Queso Yumminess

This is one of my very favorite recipes and I get asked for it a lot. It’s a much healthier version of a cheese sauce that kids and adults all love. You honestly have  to try it to believe it. I love to see people expressions when they taste it for the first time. Almost everybody says “I’m surprised, that’s really good!” Try it yourself and see….

Cashew Queso Dip

2 cups of raw cashews that have been soaked in water for at least 2 hours and drained before use (overnight soak is good)

4 cups vegetable stock

1/2 med onion

2-4 garlic cloves

3 tbs miso

1/2 cup nutritional yeast flakes

2-3 tbs tapioca flour

salt and pepper to taste

1 tsp chili powder (optional)

Put all ingredients in a high powered blender and blend until smooth. 

Pour into a pan on stove and cook on medium until thickened. You’ll want to stir this often while cooking.

Serve as you would any cheese sauce! I love it on chips, veggies and in any taco!
